Backstory:
After hearing about coffee jelly from an animated show, it sounded intriguing and so I set out finding recipes to make it. I stumbled upon these, and wow I’m glad I gave it a go!

Tips and Tricks:
- For the coffee jelly, I used gelatine leaves instead of gelatine powder and it worked out well. Just make sure to follow the packet instructions for the setting ratio of leaves to liquid.
- Make the ice cream well in advance as it needs to freeze for 8hrs.
- Use an ice cream scoop to help serve
Recommendation and rating:
Overall, what a hit! Firstly, my family weren’t so keen on this dessert idea to start with, as they were sceptical about the nature of it. But wow, this dessert proved them wrong! Everybody loved it and the flavours complimented each other perfectly. The soft, sweet creamy ice cream mixed in with the bitter, moreish coffee jelly made for a delicious bite. The dessert wasn’t complicated to make and was very tasty. And so the dish gets a well earned 5 stars!
