Background:
Recently, I’ve been looking for a lunch that’s healthy and keeps me full. Having remembered a while back that someone made overnight oats and raved about them, I thought why not take the plunge….

Recipes:

Tips and Tricks:
- I topped mine with blueberry compote, which definitely made it worthwhile. To make the compote: put a punnet of freshly washed blueberries with the juice of one large orange into a pan. Place on a relatively high heat and remove from the stove when the mixture is thick and almost jam like. Leave to cool and serve.
- Add freshly chopped fruit in between the oat layers to provide further texture
Recommendation and rating:
Overall, it was a satisfying and quite tasty lunch! The blueberry compote was sweet slightly sharp, and complimented the mellow creamy oats well. Nestled within layers was of course fresh fruit, which provided a nice bounty and needed texture. One of the best things about the recipe is how easy it is to do. A few potful’s can also be prepared for the coming days ahead, which makes it an ideal lunch option for the week. In the end, it was a pleasant lunch deserving of 4 stars!
