Backstory:
Recently, my grandma started growing tomatoes, and it wasn’t long that a bountiful harvest was soon upon us. Every week we were given a bag of tomatoes and after using them in salads and sandwiches, I was craving something different. Eventually, I came up with the idea of tomato bruschetta. This is how it went…

Tips and Tricks:
- Cut the tomatoes small for the topping
- I substituted fresh basil for dried herbs like coriander as it’s what I had to hand
- Make sure the bread proves for the allotted time, as due to time restrictions I had to cut it short which produced a dense bread.
- If I had more time, after baking the bread, I would have grilled some slices to achieve the crisp crust needed for the bruschetta
Recommendation and rating:
Overall, a solid effort! The topping was by far the best part, it was sharp, tangy and the tomatoes really shone! Because the bread was dense and wasn’t crispy, it was claggy and a chore to eat. The dish needed a contrast in texture and it wasn’t there. Due to time restrictions, some mistakes occurred but the topping was simple to make which made for an easy final assembly. In the end, the dish isn’t revolutionary and mistakes were made on my part so it gets 3 stars!
