Backstory:
Lately, I’ve been craving a healthy recipe that still feels like a treat. After researching, I stumbled upon the idea of carrot cake muffins. Initially, everything was going fine in preparation until I realised that I had lost my muffin tin! Therefore, I had to adapt the below recipe into a loaf cake. This is how it went…

Tips and Tricks:
- To convert the muffin recipe into a loaf cake, put the cake batter into a greased loaf tin and bake it at 160 fan for approximately 50 mins
Recommendation and Rating:
Overall, it was a solid and healthy bake! It was moist, and had a clean bite to it. One of the best things about the loaf, is that it doesn’t include butter, oils or sugar making it so much healthier than other recipes. The cream cheese icing was also a healthier version, by using low fat cream cheese and not including icing sugar. Some may say that the loaf is a little dense, but its better than it being crumbly. In the end, a decent bake, so it gets 4 stars!
