Wanting to make a dessert, I began looking on the web for dishes that were healthy and tasty. Eventually, I came up with the idea of key lime pie and this is how it went…

Tips and Tricks:

  • I swapped out allulose for honey in the key lime pie recipe, as I had it to hand
  • I halved the raspberry topping recipe as I didn’t want to make too much.
  • Chill the can of coconut milk in the fridge to make sure the cream top is hardened before whipping
  • Add in lime extract in the pie if you can get it, as the flavour was noticeably lacking without it
  • Add in more butter to the biscuit base to make it less crumbly

Recommendation and rating:

Overall, an ok dessert. The biscuit base paired well with the creamy centre and made for a pleasant bite. Yet for me, the whipped topping failed as the coconut milk wasn’t chilled and it ended up being more like cream soup and so I did not serve it. In addition, the lime flavour was very subtle and if you didn’t tell me otherwise, I would have assumed the dessert was a cheese cake. The base was far too crumbly and kept falling apart, likely because I used too much biscuits and not enough butter. The saviour of the whole dessert was the raspberry topping; it was sharp, crisp and blended well with the cream filling. Despite my mishaps, I still enjoyed making it, and so it gets 3 stars!
