Red Pepper Soup

Backstory:

As it begins to get colder, soups and stews become part of the weekly roster. On that slightly poetic note, my family this week requested me to make some red pepper soup, as they’ve always fancied eating it. In turn, I had to oblige and this is how it went…

Tips and Tricks:

  • Be careful when measuring the chilli powder as I was very heavy handed and you certainly felt the spice
  • To get an even char under the grill, keep turning the peppers every 3-4 minutes

Recommendation and rating:

Overall, the soup left me feeling warm and fuzzy inside! It was sweet, slightly tangy and of course had quite a kick! Add in a bread roll and well you’ve got yourself a great pairing. A comforting dish for those cold winter evenings and is relatively easy to make. A solid, simple meal and so it gets 4 stars!
