Yogurt Eton Mess

Backstory:

Lately it has been really hot and I’ve been craving a dessert that was sweet and also refreshing. After searching, I decided to make Eton mess. But I wanted to make a healthier version, which led me to find a recipe that swapped out the whipped cream for yogurt. This is how it went…

Tips and Tricks:

  • You can use any fruit in the Eton mess, it doesn’t have to be strawberries, here I used raspberries
  • Take time piping the meringue kisses onto the baking tray
  • I puréed some of the raspberries instead of lightly crushing them to make for easier eating

Recommendation and Rating:

Overall, it got a thumbs up! Very light, tasty and wasn’t too sweet! The raspberries provided needed sharpness, the yogurt added a slight tang and the meringues brought the sweetness. It was quite simple to do and making the meringues was the hardest part. In the end, a solid dessert which maybe could have done with a crushed biscuit topping or perhaps another fruit to provide more dimension to the dish. And so it gets 4 stars!
