Kung Pao Chicken

Backstory:

Midweek was manic! I was busy with coursework and needed an easy meal. With chicken to use I began searching for recipes. Firstly I thought about making a sweet and sour dish but nothing immediately grabbed me. I then decided to hunt for chicken stir fry ideas. I’m so glad I did, as I found this gem (link below). The dish is sweet and slightly hot, it also pairs well with any type of rice! It’s a favourite of mine! After a long day, I always look forward to having this recipe for dinner!

Tips and Tricks:

  • Add in extra accomplishments to fry like pineapple, mushrooms or baby corn to elevate this dish further.
  • You don’t have to use boneless chicken breast, I used boneless thigh meat which was cheaper and offered a richer flavour.
  • I replaced the chili garlic sauce in the recipe with gochujang paste as I thought it would give a better kick.
  • I recommend adding in a couple of tablespoons of mirin to the sauce, to provide further sweetness.
  • Serve with rice and sesame seeds to make this dish accomplished.

Recommendation and rating:

If you’re ever in need of a quick and tasty midweek meal, I cannot highly recommend this dish enough! It’s a sensation and tastes as good as a takeout! The chicken is tender and balances well with the soft fruit and vegetables. The sauce is of course the star of this dish, sweet, slightly salty and has just the right amount of heat! It’s easy to do, and incredibly flavoursome. With my additions above, this dish is 5 stars but simply rating the recipe on its own, and in need of embellishments, it achieves a respectable 4 stars!
