Backstory:
Ever since ordering it from Italian restaurants, I’ve wanted to make gnocchi. The soft pillowy parcels always delight with any sauce they’re paired with! After searching the web, I came across this recipe and I’m glad I did!

Recipes:
Parsnip Gnocchi: https://www.waitrose.com/ecom/recipe/parsnip-gnocchi-with-sage-garlic-mushrooms
Tips and Tricks:
- Add in more cheese to the mushroom sauce to increase the richness of the dish
- When cooking you’ll know the gnocchi is ready once it floats to the surface of the boiling water
Recommendation and Rating:
Overall a great success! The tanginess provided by the cheese accompanied by the earthiness of the mushrooms is a treat. The soft, almost pasta like gnocchi, pair well with the sauce and the crispy sage adds welcome texture to the dish. Despite the process taking a fair bit of time, the end result is worth it! Perhaps, I would add in some mustard or lemon juice as the recipe is missing an acidic flavour. Furthermore, I think the dish would benefit from the addition of pancetta or bacon to provide a more fulfilling bite. With additions needed, this gem still needs some work and so it gets 4 stars!
