Backstory:
For a long time, I’ve wanted to make a quiche; I think it stems from the fact that it’s one of my mum’s favourite quick meals. Wanting to impress, I set out to find a quiche recipe that everyone will enjoy, with the added bonus of being healthy. After stumbling upon this one, I gave it a go and it certainly exceeded my expectations!

- Be careful when transferring the quiche to the oven as the mixture can spill out

Recommendation and Rating:
Overall, I was pleasantly surprised. To be honest, I had some doubts whether everyone would enjoy a crustless quiche after having pastry based ones for years, but it was a hit! The soft cheesy egg mixture, paired with the texture of the thick cut ham just goes perfectly together. The mushrooms further add to this flavoursome ensemble. What I love most about this recipe is it’s versatility, you can add in any topping to please the masses. It might “just” be a quiche, but this recipe was a triumph; so it gets 5 Stars!
