Apple and Blackberry Pancakes

Background:

It was a midweek morning and me and my Nan really wanted something sweet and filling for lunch! I thought you couldn’t really go wrong with pancakes and with apples seeming overripe, a perfect opportunity arose! Glad I decided to give it a go as we both thoroughly enjoyed this one!

Ingredients:

  • 3 apples cored and chopped
  • 2 eggs
  • 3 heaped tbsp of self raising flour
  • splash of milk
  • punnet of blackberries
  • juice of 2 large oranges

Method:

  • 1. Blitz the apples with a hand blender or regular blender
  • 2. In a bowl add in the blended apples, eggs, flour and mix
  • 3. Add in the splash of milk to the batter and mix but if it’s too thick then add in more
  • 4. Place blackberries in a pan with the orange juice and heat until you get a jammy consistency
  • 5. Spray some oil in a non stick pan and dollop in some batter in the pan, then fry the pancakes for a couple minutes on each side for a golden colour.
  • 6. Serve with blackberries and toppings of your choice!

Tips and Tricks:

  • I highly recommend serving with low fat ice cream or light double cream
  • Keep an eye on the pancakes in the pan so they don’t stick and burn
  • Can add in blackberries to the batter but I would cut them smaller

Recommendation and rating:

Overall, this one was a berry tasty dish! All puns aside, the berries were really the star of the show, sweet and slightly sharp, which complimented the soft doughiness of the pancakes. The ice cream or cream adds another dimension to the plate. All in all a lovely dish! It’s great, but not revolutionary nor technically challenging and so in that case, I give it 4 stars!
