No Butter, No Added Sugar Banana Bread

One of the healthiest treats on the block!

Backstory:

I’ve always loved baking, but recently I’ve been at a bit of a crossroads. Making the sweets is the fun part, but the guilt of having to eat them afterwards, knowing how many calories and macros are in them, is a tough one. So, I thought as a compromise, I’ve decided to go down the route of healthy baking! After looking at some banana bread recipes, I thought about how to replace the sugar and butter, and with simple tweaks, the result turned out great!

Recipes:

Banana bread-Ingredients:

  • 1 cup of plain flour
  • 1 cup of self-raising flour
  • 2 Large eggs
  • 1 tsp baking powder
  • Pinch of salt
  • 3 tbsp olive oil
  • 4/5 ripe bananas
  • 1 tsp vanilla extract

Method:

  • Heat the oven to 160 fan or 180 conventional and line a loaf pan with parchment paper
  • In a mixing bowl, mash the banana with a fork and add in the eggs and oil and mix further
  • Add in the vanilla extract and mix again
  • Weigh out the flour, baking powder and salt and sieve into the wet ingredients
  • Mix the components together then scrape into the loaf pan
  • Bake for 45 mins then leave to cool in the pan for 10 mins before serving

Tips and Tricks:

  • Next time I’d recommend adding in a tsp of ground cinnamon to provide another flavour
  • Mix everything thoroughly to avoid lumps
  • Can serve with a squeeze of honey on top

Recommendation and rating:

Overall this recipe was simple but tasty! No added sugar and no added fat from the butter has removed the guilt of eating something sweet, but the taste wasn’t compromised! It produces a soft moreish bread which was a filling snack! With a couple of tweaks needed, such as more vanilla extract and the addition of cinnamon or other flavourings, then this recipe would be 5 stars but at the moment it’s 4 stars!
