Backstory:
Jackfruit is an ingredient that I’ve always wanted to cook with! Every time I try it, I’m still amazed at how it can mirror the texture of meat and yet is a fruit! Often seeing it in curries, I decided to give it a go, and I’m glad I did! A tasty dish, for sure!

Tips and Tricks:
- Next time I’d cut the jackfruit smaller to make the dish easier to eat!
- Occasionally stir the curry once it’s simmering on the hob
- You don’t have to use fresh chilli’s, I used chilli powder which was readily available
Recommendation and rating:
Overall this dish is a midweek hit! Simple, but still packs a punch! The sweetness of the jackfruit blends perfectly with the mellow heat of the curry. The potatoes providing substance, and the coconut milk gives the sauce a richness. Paired with rice, you can’t go wrong! There were mentions of cooking the potatoes for longer and cutting the jackfruit smaller, and perhaps adding in more herbs. Therefore, the rating of this recipe is 4 stars!
